Doggy!
How did the idea for Sousuke as a dog come about? I like it!

It is fairly ironic, either way - given that he has been fighting in a muslim country as a child, where being a dog is considered being the lowest of the low...arabian insults include 'you are not even worth stepping on', or showing someone the bottom of your soles, since shoesoles are considered dirty...'filthy dog' is another one.
I don't think Sousuke as a dog is supposed to hold any significant value as an arabian symbol, however - more than a little likely, it simply has the japanese meaning of dog to it, that is, cute, submersive and fierce at the same time...
I always thought it was a little silly and demeaning, but I guess you couldn't expect anything else from something japanese.

Is it just me, or are there way too many talking decapitated heads around these days?

I think it started with Shikidouji. There are a lot of art from her that depict Sousuke as a dog. I think it's just some iconic symbol symbolizing Sousuke in a way that seems chibi or something of that sort. Purely for fun.

Dog / puppy is Sousuke's basic nature... loyal, cute from a distance,
packs a nasty bite, and prone to destroying things...
That and watching a room of rabid fangirls melt and go 'Awwwwwww!!'
