Rei and Unit-01 are made from Lillith and the other Evas from Adam. That's why Gendo used Rei in his version of Instrumentality and SEELE used Unit-01 for Lillith and the MP Evas for Adam.
Back on topic, in an Eva vs AS battle, it'd be a tough call. An Eva would win against normal ASes, but the Lambda Driver against the S^2 engine would be interesting. It really comes down to whichever pilot is more pissed off or at a psychological breaking point.

I'd like to suggest that the only reason Sousuke's cooler is because of his ten-odd years on the battlefield, accounting for his ability to look more manly, kick Shinji's ass in anything outside of a giant robot, and not whine aloud. Which, frankly, is an unfair advantage.

Well, my thoughts on an EoE matchup...
this is in 2015, so Mithril's had at least a decade for R&D and tactics. I'd like to think that by then, the M9E Falke (or a more hi-tech AS) is now in service; grunts still get AS without a Lambda Driver, but top guns (or "ace pilots") get LD-equipped ASes.
Imagine Sergeant Major Kurz Weber with a Lambda Driver. Even greater pwnage. Or Cluzout's martial arts mated with the LD's abilities. Badass. ^_^
The PRT and SRT ground forces should be a match for the JSSDF commandos, given their experience fighting Arastols. The Comanche team should also do well giving CAS, what with the advantage Mithril has in ECS. As for air support, Mithril should have swapped their Harriers for F-35B JSFs by now... which would allow them to intercept the bombers carrying the MP Evas.
Although I know it could never be that easy.
As a last ditch resort... I'm pretty sure they have N2 mines as well.
