My humblest apologies. I let my derision for D&D get out of hand. Unrelated to the forumns, and pratically offtopic. I even use D&D as an example of a Role Playing Game, because it's more widely known that better ones. (GURPS Black Ops is fun...). Aside from that, I'd like to contribute to this thread, beginning now.
I'd say tossup between being Samurai, Ninja, and Ronin. Since they're mercs, they'd be Ronin, but they've got ideals and morals, similar to Samurai. Ninja are out. They are pay for hire, and are not idealistic in the least, plus they were viewed as dishonorable scum and were killed if seen/recognized by anyone but themselves and their employers. Why do you think they got good at camoflage? One ninja would easily kill another, due to the fact they all weren't from the same hill clan. Perhaps Wako? They are based offa a ship, and are semi pirates (being mercs and all).
A crossbow would be the best weapon for Sousuke. It's the middleage equivalent of a SMG. Kurz would be using either the English Longbows, or the Compound Bows that the Huns used so effectively.
I'd say the AS would probably be very similar to the Mongols inventions of rolling, amoured horse trains (early tanks) or the Korean amoured wagons, that were archery units. The ARX-7 would most likely be able to mount an arbalest/ballista/ seige weapon in addition to it's normal complement of archers.
Some things don't exactly tweak, for example schools (one sex attended). Some sort of Academy or Religious Insitution would work for education, (christian, shinto, buddhist, whatever.)
Kaname would likely be heir to her father's land, with no Male heir. As for 'No 1 idol that nobody wants to have as girlfriend' most likely pushing any and all suitors to retain independence. Father and Sister could live in another province/kingdom as noble hostages like Aetius and his living with the Huns. It wouldn't sync in Japanese Feudal society. Kaname would be bethrothed to some dude already, (arranged marriages and that jazz). She might have been a catholic convert who lived in Rome for awhile and then came back to Japan (accounting for her attitude). Same thing for Europe.
As for black technology, some secret knowledge of Alchemy (braces self) and perhaps knowing about the innovations that were lost in the Library of Alexandria? The works of Mecanos for example. It was unknown at the time of the middle ages or was under the radar.
I can see Sousuke being assigned to Protect Kaname, as a Swiss Merc for Europe. For Japan he'd be posing as a ronin that she made a vassal of. Going against history he wouldn't be a eunch.
Kurz would be a bowman, and Melissa one of the rare female knights. Tessa a captain of her ship, perhaps one of the ships in Zheng He's fleet that managed to survive. It'd be big enough for the purpose and was far ahead of it's time. All ships in this fleet were destroyed after the voyages of the Muslim Enuch Zheng He, but if one survived it could be the historical TDD-1. http://www.history.uncc.edu/jmflower/sh ... arison.jpg
Chinese Rockets would serve as long distance missles, and maybe ballons in the place of harriers.
For Europe, the Aircraft/Submarine/ASes, would be along the lines of DaVinchi's stuff.
Europe or Japan would serve equally, just on different parts. Socially Europe might work better, styllistically or techwise, Japan.

I really didn't think about it much. That's just stuff I could remember off the top of my head. Except for Zheng He and Aetius. I couldn't spell their names
That's all real basic. I really should write an AU when I finish RIM. It'd be fun! Not too mention very...interesting. I'd have to bend some plot points, but I could make it work.
