Aaaaanyway, wouldn't it be more organised if writers kept the individual chapters of their fics in one single thread, rather than creating separate threads for each chapter? I mean, each chapter is only one (or a few) posts long. Just a thought.

Having each whole chapter as a new thread gives more room for ongoing feedback focused on that particular content. In other words, the forum would be more organized, but each thread could be a mess.
Have you seen the Table of Contents thread? Not everybody has posted there, or keeps up with adding, but it's an attempt at organization that works when maintained.

I'm half tempted to suggest subforums for the extremely prolific authors such as dd. That could clean things up and would help new arrivals find the early stuff or the works of the occasional writer. Admittedly, that might make dd update his part of the TOC, which would be a big job.

If I add a mod that allows subforums, then, yep, that's one of the first things to be done. Or if I don't, subforums will be a part of the next development level of phpBB2 although it's hard to say when they're release the pre-releases.
The way that most authors post came about naturally- they weren't told how to do it. I don't know if most authors who have come after simply followed their model, but I know that those who have tried other methods ended up with more chaotic results.
Authors are always able to try posting their stuff in other ways. The way it's done now isn't a rule, it's just what's worked best. The challenge is overcoming reading habit.
