Hidef Anime? Probably not much. I guess the details would look sharper and the colors come out better.
Lucas patches, as in Geroge Lucas (think Star Wars Special edition.....
I.e. Lets shove some hitech 3d effects into a lowtech movie just to make the lowtech special effects look even crappier. )
Basically adding unnecessary stuff into a re-release just because you can.
Higher definition, better sound (lossless), probably more interviews / commentaries,
bonus materials (too bad your very own Venom isn't included, but hey...)
...about what you'd expect from a "ReMastered" release, or whatever the hip
word choice is these days for this piss-poor excuse to make us poort fans

I TOTALLY agree regarding the idea of Lucas style "patches"
Or the most egregious "Lucas patch" in my opinion was changing the gunfight in the Cantina. As far as I'm concerned, Solo shooting first was an essential part of that character.

I wonder if they just upscale the image source to 720p or 1080p
Would be nice to have native 1920x1080 source because we can capture better wallpaper material this way.
